BCS SESSION: Slow & Seasonal: Crafting Sustainable Cocktail Programs

This course guides bartenders through the art of slow, seasonal drink crafting with a focus on zero-waste techniques and flavor preservation.

Participants will learn how to incorporate seasonal ingredients, homemade syrups, shrubs, infusions, spirits, tinctures, and preserved elements into their cocktail programs, aminimizing waste and maximizing ingredient value.  The class combines practical behind-the-bar skills with creative recipe development, empowering bartenders to build menus that are innovative, cost-efficient, and environmentally conscious.

Belinda Kelly is the Beverage Director at Simple Goodness Sisters, a beverage brand including Simple Goodness Syrups and the Simple Goodness Soda Shop, a farm to bar cocktail cafe. She is the author of Drink Your Garden (Countryman/Norton, 2025), a guide that follows a year of growing and preserving on the Simple Goodness Cocktail Farm. Belinda previously founded one of the country's first mobile bars, Happy Camper Cocktail Company, and still loves to throw a party. She speaks on seasonal beverage creation, zero-waste bartending, and building sustainable F&B brands and teaches cocktail classes in the PNW.
